Maple Cinnamon Coffee Cake With Streusel Topping: 1 4oz Scone Mix (Divided); 1 cup milk; 1 egg; 1/4 cup sugar; 1/4 cup all-purpose flour. Topping: 1/2 cup brown sugar; 1/4 cup butter (Room temp.); 1 tsp ground cinnamon. (1)Reserve 1/4 cup of the scone mix in a medium bowl; set aside for the topping. (2) Place remaining scone mix, milk, egg and flour in a mixer bowl. (3) Using a paddle, mix on low speed 1 minute. Scrape the bowl. Continue to mix on low speed for an additional 1 minute. (4) Spread the batter in greased 8 inch or 9 inch square pan or round layer cake pan. Topping: (1) Place reserved 1/4 cup scone mix and topping ingredients in a mixer bowl. Using a paddle, mix on low speed 30 seconds or until crumbly. (2) Sprinkle topping evenly over the cake. (3) Bake in a preheated 350 degrees F oven for 30-40 minutes or until a toothpick inserted in the center comes out clean. 1 package scone mix; 1/2 cup cream; 1/2 cup cold water. (1) Preheat oven to 425 degrees F. (2) Combine 1/3 cup cream, 1/2 cup water and scone mix in a medium bowl. Stir with a spoon until a loose dough forms. Dough will be slightly sticky. (3) Knead dough 5 to 6 times on a generously floured board, folding dough in half on top of itself each time until dough is soft and not too sticky. (4) Divide dough into 2 pieces. Pat each piece into a 4-inch diameter dome with center slightly higher than outside edge. Cut each dome into 4 wedges. (5) Place scones on an ungreased baking sheet. Bake 10 to 12 minutes or until golden brown.
